Festive Red Berry Porridge
If you're struggling to embrace these cold dark mornings and leave the warmth and coziness of your bed behind, then I hope this porridge recipe can go some way to making things easier. I think porridge is like the warm hug of breakfasts.
Packed with the goodness of oats, nuts, seeds, yoghurt, and a sneaky half apple in there too, you're getting over a third of your RDA of fibre, all well as over 20g protein per serve. Topped with vibrant red fruit, it brings a bit of early festive cheer, too.
Serves 1 (simply multiply up to feed more mouths)
Ingredients
40g rolled oats
100ml milk (swap for oat, soy, almond, or whatever takes your fancy)
150ml water
1/2 apple, coarsely grated
80g redcurrants (you could also use cranberries, blackcurrants, or any other kind of berry, fresh or frozen)
2 large dollops of Greek yoghurt
20g (a small handful) of chopped nuts and seeds (I like brazil nuts, pecans, almonds, pumpkin and sunflower seeds, but feel free to use whatever you have available)
A drizzle of maple syrup
Method
Pour the oats into a saucepan along with the milk (or milk alternative) and water and cook gently over a low heat, stirring regularly.
Meanwhile, chop the nuts then toast them in a pan set over a medium heat. Shake the pan frequently to make sure they don’t burn - which is all too easy to do.
Put the redcurrants into a small pan along with a splash of water. Place over a high medium-heat and bring to a simmer. Let the fruit poach for 2-3 minutes, until softened and most of the water has evaporated.
As the porridge begins to thicken, add the grated apple and continue to stir gently until it has reached a consistency you like.
When you’re ready to serve, tip the porridge into a bowl, spoon over the berries, dollop on the yoghurt, sprinkle over the chopped nuts and drizzle with a little maple syrup.
